We are proud to announce our partnership with Winnow Solutions for food waste management as we strive to reduce wastage at the hotel, leading to lower costs and delivering a better final product to our valued guests.

We place environmental and social responsibility at the top of our list of priorities and by implementing food waste prevention strategies we work towards AccorHotels’ Planet 21 initiative.

Pullman Dubai Creek City Centre has achieved great results just after four weeks of using the Winnow system. The impact on our operation is tangible both in terms of waste reduction and demonstrated return on investment. The regular reports provided by Winnow help everyone in the team see where waste is happening and how much it costs.

Pullman Dubai Creek City Centre is the first hotel to adopt Winnow’s technology in the region. The hotel places environmental and social responsibility at the top of its list of priorities, in-line with the AccorHotels’ Planet 21 initiative which aims to reduce food waste by 30% before the year 2020 across their entire portfolio of hotel brands, consisting of over 4,000 hotels.

With the Winnow technology, the hotel is able to cut food waste by automatically measuring what gets thrown away and receiving data that help chefs reduce overproduction. The system comprises of a set of digital scales and tablet which is connected to the cloud making it quick and easy for chefs to measure food waste. Teams then receive daily reports highlighting where waste is occurring thereby providing insight to make their operations more efficient and sustainable.

Nishan Silva, General Manager at Pullman Dubai Creek City Centre Hotel & Residences said: “As part of the wider AccorHotels social movement to tackle food waste in-line with the Group’s sustainable development program ‘Planet 21,’ Pullman implemented the Winnow Food Waste Management program as the pilot hotel for the group back in 2016. And so far, the program has witnessed a reduction in food waste by almost 70% in the initial months. With such outstanding results, AccorHotels are now looking to roll out the program gradually to all their UAE properties by 2018.”
